Why You Should Go to Cabo for a Weekend

February 14th I was officially diagnosed MODY, February 16th I was on a plane to Cabo, San Lucas. While I had been dealing with diabetes for over a month and probably shouldn’t have set off for a vacation in foreign country sometimes you just gotta risk it for the biscuit though. Let me tell you its definitely worth it and you’ll be fine!

Where to stay? First off there are two parts of Cabo, there’s San Jose del Cabo and Los Cabos. Both have different vibes, San Jose is more relaxing while Los Cabos is more of the typical “spring break” location. This article will focus mostly on Los Cabos.

Day 1

Arrive around mid-day and check into the ME Cabo . This hotel is gorgeous and is in the perfect location to anything and everything you may want to see or do. Have a relaxing first day, taking a stroll up and down the beach and relaxing by the pool. Be sure to ask for a fridge for your room for your insulin. The staff at the ME is more than accommodating.

If you can try and score a reservation to El Farallon at the Pedregal Hotel. Go at sunset if you can as this restaurant is on the side of a cliff and will give you the most amazing views. Overlooking the Pacific Ocean you will make your dinner selections from seafood to meat and poultry and your sides as well. This will definitely be a dinner to remember. This was one of the healthier meals I found in Cabo. With a selection of healthy appetizers and then main course being mostly protein, it’s a win-win.

Day 2

Arrange for a taxi to take you up to Flora Farms. It’ll take about 45 minutes (closer to the other part of Cabo I mentioned earlier) but I cannot recommend this place enough. Part restaurant, part farm, and part residence, Flora Farms is a 25 acre organic working farm in the foothills of the Sierra de la Laguna Mountains in San Jose del Cabo, Mexico. They have cute boutiques, a spa, cooking classes, and of course a farm-to-table restaurant sourcing local ingredients and the most delicious hand made bread. While we were there we took a free walking tour of the farm and enjoyed a delicious lunch. They also have a cute little market where you can buy fruits and vegetables from local farmers. My boyfriend (apprehensive at first) loved this place and couldn’t stop talking about it the whole trip…We definitely will be back. Not the most diabetic friendly with all the bread based food they have, but always remember you can do an open face sandwich for half the carbs. They also serve soups and salads as well if you don’t want to go too carb heavy.

Head back to the hotel and rest up before dinner. Downtown Cabo is a bit touristy but we were able to find a taco stand that we ate almost all our meals at. It was cheap, convenient and delicious. The atmosphere was a little lack luster but we were ok with it since the tacos were so delicious! If you are feeling up to it visit Squid Row and the various other bars and clubs along the main street.

Day 3

Find a local hole-in-the-wall breakfast place before heading off for ATV/4 wheeling. We had enough beach time so we were itching for an adventure. Through our hotel we were able to sign up for a ATV-ing experience. Wear your most casual (will get dirty) clothes for this experience. If you can the afternoon tour is the best because they will take you to some of the most incredible vistas for sunset. They will also stop the tour periodically to show and teach you more about Mexican agriculture. Check out how tall that cacti is haha.

You will be exhausted after this and will probably just want to grab something quick to eat and head to bed.

Day 4

Before heading home it’s a must to go on a boat and see the arches. There will be plenty of boats lined up ready to take you out on a tour. Some tours will even allow you to get out and swim and visit the beaches if you want and depending on the tide. We went in the morning so it was a bit too cold for swimming but riding along in a glass bottom boat was still great! Remember to pack some snacks if you plan on hanging out at the beach all day (don’t want that blood sugar dropping to low while you are at the beach) ;)

Grab some last minute tacos before heading out and back home.
